Breakfast is the most important meal of the day; it’s also the most limited, or o it seems. To many, breakfast choices are limited to cereal, oatmeal, eggs, or a baked good/pancakes/waffles. Sometimes a meat like bacon or sausage will get thrown in for good measure, but the choices compared to lunch and dinner leave much to be desired. If you look at breakfast differently, you’ll see that breakfast is really only limited to its consumer.
For example, eggs alone are boring. But, eggs served with sautéed zoodles or spinach and garlic with a hint of onion, sprinkled with cheese is a meal. If an egg can be served in a chef’s salad, why can’t it be enjoyed as part of a healthy breakfast salad? Sprinkle balsamic vinegar for flair and enjoy!
If you don’t like eggs (or can’t eat them) why not slice a tomato and serve with avocado sprinkled with feta? Or if you’re really craving carbs, you can have a stack of pancakes with this wheat-free recipe . Fill a cantaloupe with Greek yogurt and top with granola and berries. These breakfasts will fill you up, and gear you up for the rest of the day!
But, maybe you need some meat to go with your meal. Don’t concentrate on heavy, cholesterol-laden meats like sausage; instead try turkey bacon, or regular bacon served with eggs and a side of fresh fruit. Enjoy smoked salmon with two eggs and an avocado salad. When you consider how you can change breakfast food to fill your high-protein, low-carb needs, the possibilities begin to become endless!
