Ingredients
  1. 3 chicken breasts (baked and cut up)
  2. 1 can reduced sodium crushed tomatoes
  3. 5 carrots, chopped
  4. 1/2 onion, chopped
  5. 3 zucchinis, chopped
  6. 2-3 cloves garlic chopped
  7. 2-3 sweet potatoes chopped
  8. 2 tbsp Basil, chopped
  9. 2 tbsp Parsley, chopped
  10. Chili flakes- to taste
  11. Paprika- to taste
  12. 8 cups reduced sodium chicken broth
  13. 1 cup noodles (optional)
Instructions
  1. Add garlic and onions to a lightly oiled pan over medium heat for 1-2 minutes.
  2. Add carrots, zucchini, and sweet potatoes and sauté for 5-10 min (or until carrots start to soften)
  3. Add broth, tomatoes, and all seasonings.
  4. Bring to a simmer until the sweet potatoes can be pierced with a fork (about 10 min)
  5. While simmering, add noodles (cooked according to packaging) - noodles are optional
  6. Add precooked chicken last and let simmer for 5 min, or until warmed through.
  7. Ready to serve
Notes
  1. Noodles are optional
  2. Pre-cooking the chicken reduces prep time
