Spaghetti Squash w/ Portobello Mushrooms and Tomato Sauce

Ingredients
  1. 1 spaghetti squash
  2. 3 portobello mushroom caps- sliced in 1/2 in pieces
  3. 1/2 cup balsamic vinegar
  4. 4 cloves garlic, minced
  5. 1 onion chopped
  6. low sodium Vegetable Broth
  7. 2 fresh tomatoes, chopped
  8. 1 can (13 oz) Diced Roasted Tomatoes (no salt added)
  9. Black pepper to taste
  10. Fresh basil, chopped, for garnish
Instructions
  1. Preheat oven to 350F. Cut squash in half lengthwise and remove seeds. Place squash on sheet pan lined with parchment paper and roast, cut side down for about 40 min or until squash is tender. Meanwhile, place mushrooms with balsamic vinegar and 1/2 of the garlic in a bowl to marinate. Set aside. Cook onion in a saucepan until translucent, added vegetable broth as needed to prevent sticking. Add remaining garlic and cook for 1 min. Add canned, diced tomatoes and let simmer for an additional 10 min. Season with pepper. Heat a nonstick skillet and sear marinated mushrooms for 3-4 min on each side until golden. Add remaining mushroom marinade and extra pan juices from cooked mushrooms to tomato sauce. When squash is cooked, run a fork along the grain of the squash to generate spaghetti-like strands. Place squash in a shallow bowl, add mushrooms on top, and cover with tomato sauce. Season with pepper and garnish with basil.
